Green Bircher Muesli

I am so excited to be posting my first recipe!

Although I will post nothing but scrumptious recipes on this site, I figured that my first post should still be something special. And ladies, this is indeed special.

Meet one of my favorite breakfast creations: The Green Bircher Muesli!

Oh so simple and yet oh so tasty. This breakfast should be prepared the night before, which will save you time in the morning. In only 10 minutes you will have a filling, scrumptious best-start-to-the-day meal ready. Oh, and did I mention that it is packed with nutrients? I love getting a good doze of my daily greens in from the morning already!

The spinach alone in this breakfast will provide you with more than double your daily needs of vitamin K and a whopping 84% of your daily vitamin A needs. Who said superfood miracle?!

So here it goes:

Ingredients for 2

  • 1 cup rolled oats
  • 1/4 cup ground flax seeds
  • 1 cup milk of your choice ( I use almond milk)
  • 1/4 cup lemon juice
  • 1/2 cup milk of your choice
  • 3 cups tightly packed fresh spinach
  • 1 banana
  • 1 tbs date syrup (or sweetener of your choice)
  • 1 tsp wheatgrass powder (can easily be omitted or substituted for another green powder of your choice)
  • 1 grated apple
  • 1/2 grated zucchini
  • Toppings of your choice

Method
Mix milk, oats, flax seeds and lemon juice together and leave it in a sealed container overnight. In the morning, use your blender to blend 1/2 cup milk, spinach, banana, date syrup and wheatgrass powder together. Add to the oats together with the grated apple and zucchini. Top with whatever toppings you prefer. I used blueberries, pomegranate seeds, kiwis and hemp seeds.
